Tofu-Avocado Burger Patty

Flavours: 2 tbsp nutritional yeast flakes, 1 garlic clove, 1 tbsp miso paste, pepper

Bulk: 1 small ripe avocado, 200g firm tofu, ½ tbsp flour

Jazzy: top with enokitake mushrooms and a side of cucumber in a soy sauce and sesame oil dressing

Lets cook: Remove all the avocado flesh and mash with a fork in bowl. I left some small chunks in there. Add the tofu by crumbling it with your hands. The tofu should not too be too chunky, but not like a ‘blended’ consistency. Add the miso paste, yeast flakes, crushed garlic clove and pepper to taste. Keep mixing with your hands until all the flavours are evenly mixed. You can add a little more flour if your mix is not firm enough. Form patties and add to a lightly oiled frying pan on medium-high heat. Cook for around 7-8 minutes each side then you’re done. Simples! Serve however you like  cutefacenobackground
