Plant Power Comfort Bowl

All you need

Flavours: 2 tsp miso paste, sesame oil, 1 tbsp apple cider vinegar, 1 inch cube fresh ginger, 1 garlic clove

Bulk: Large avocado, medium sweet potato, medium carrot, small red onion, 200g shirataki noodles (or noodle of your choice)

Jazzy: top with toasted sesame seeds

Lets cook: Set the oven to 220oC. Start by spiralizing the sweet potato, carrot (I kept the skin on) and slicing/dicing the onion. Toss the potato in a little oil and place on a baking tray. Sprinkle with some S/P and bake for 20 minutes, giving it a mix half way to avoid burning. Put the carrot and red onion, along with a crushed garlic clove, grated ginger, apple cider vinegar and some sesame oil in a frying pan on medium heat. Give it a mix frequently. Meanwhile, halve the avocado and smash with a fork, or blend, along with the miso paste and some pepper until a smooth paste is formed. Cut the other half into cubes. Put the shirataki noodles on boil for 5 minutes (other noodles will need longer). By now, the potato should be nice and crispy, the carrot and onion soft and the noodles ready. Drain the noodles and mix in the avocado-miso paste. Put into a bowl then pile everything else on top! Tuck in  cutefacenobackground
