Better than instant
Flavours: 2 tbsp miso paste, 1.5 tsp ground cumin, 1.5 tsp ground coriander, pinch chilli powder, ¼ tsp garlic powder, pinch turmeric, pepper, 1 tsp cornflour
Bulk: 200g drained weight shirataki noodles*, 5 spring onions, 400g chestnut mushrooms, *don’t have shirataki noodles? This works well with 500g spiralized courgette as well!
Lets cook: Roughly cut the mushrooms into bite size pieces. Mix all the flavours into 1/3 cup warm water. Add this along with the mushrooms to a pan and cook on medium heat for 7 minutes. Drain and rinse the noodles (or spiralize the courgette) and add to the pan for a further 3 minutes. Then it’s all done
As I was cooking this meal, it reminded me of the koka curry noodles my boyfriend eats (more often than he should do), and so that’s why it’s a ‘cheat’ and kinda ‘instant’ with total prep/cook time being around 12 mins!
