Tofu Balls with Spicy Orange Spinach

Flavours: crushed garlic clove, 1 tbsp tomato puree, chilli powder (to taste), S/P, 2 tsp sesame oil, zest and juice of 1 medium orange

Bulk: 400g firm tofu, 350g spinach (I used frozen), 1 tbsp cornflour, 1 small white onion

Jazzy: add 2 tbsp yeast flakes to the mashed tofu and top with toasted sesame seeds

Lets cook: Start by making the tofu balls. Mash the tofu with your hands, or fork. Add the cornflour, plenty of S/P and yeast flakes (if using). You want the tofu to be able to bind together. If need be, you can blend a small portion of the tofu to make everything stay together easier. Form balls and fry in sesame oil on a medium heat. Move the balls around for even cooking. Cook for around 10-15 minutes until crisped on the outside. Meanwhile, stir fry the onions, garlic and orange zest for a few minutes. Then add the spinach, tomato puree, S/P and chilli powder to taste (around ½ tsp). Once the spinach is wilted, add the orange juice and cook for 8 minutes. Cook the spinach until there is no wetness left. By now, the balls should be cooked. Add the spinach to a bowl, top with the balls and sprinkle with some toasted sesame seeds for extra fazaz  cutefacenobackground
