Game changing cheese
Eat as you like VE
Flavours: ¼ cup nutritional yeast flakes, 1/8 tsp turmeric, ½-1 tsp white wine vinegar, touch of S/P
Bulk: 2 tbsp white flour
Optional: add ½ tsp Dijon mustard (this takes away some of the sharper tastes)
Jazzy: you can make this cheese sauce herby by adding basil, oregano etc. or make it spicy by adding chilli flakes, make it more savoury by adding cracked black pepper, make it sweet by adding dried cranberries….whatever you want! Just experiment on how you like your cheese 😉
Lets cook: Whisk everything together in a pan with ½ cup water on a low-low/medium heat. For the white wine vinegar, start with ½ tsp then add more nearer the end to taste. Keep stirring to get rid of lumps and to avoid burning the mixture. When the mixture starts to thicken on the bottom, remove from the heat, stir until even and add back to the heat. It should thicken up quite quickly and you can have it as runny or thick as you depending on how you want to use it. I gently heated mine for 5 minutes to create a thick sauce
I took notes on quite a few vegan cheese sauces across the web and thought some missed the sharp taste you get with a more mature cheese sauce. This is where the white wine vinegar comes in with a touch of pepper. This makes the sauce more dimensional. Super quick to make and super versatile with many recipes/foods.
