Sweet Miso and More soup

Soup that relaxes

Flavours: 2 ½ tbsp. miso paste, ½ tsp sesame oil, S/P

Bulk: 170g peeled sweet potato, ½ small white onion, 40g kale (only use the leafy parts of the kale and not the harder ‘stem’ parts)

Jazzy: top with toasted sesame seeds

Lets cook: Preheat the oven to 220oC. Cut the potato into small cubes and boil for 7 minutes on a medium-high heat. Meanwhile, slice and dice the onion then coat along with 20g of the kale in the sesame oil. Place onto a tin-foiled baking tray and sprinkle with S/P. Mix the miso paste in a small cup/bowl with a small amount of warm water to form a more dilute paste. Once the sweet potato is cooked, drain and return to a clean pan (I just swilled the same pan of suds). Place the kale/onion in the oven for 8 minutes. Add 2 cups of boiled water along with the miso and the rest of the kale to the sweet potato and simmer for 8 minutes. Dish out the soup and top with the kale/onion mix and some sesame seeds.
