Mushroom Pea-Mash Bites

Flavours: 1 tbsp Dijon mustard, S/P

Bulk: 350g peeled potato, 18-20 chestnut mushrooms, 100g frozen peas

Jazzy: serve on some romaine lettuce

Lets cook: Preheat the oven at 220oC. Peel the potato and cut into rough chunks. Boil for 10 minutes then add the peas for another 5 minutes. Drain and return to the pan. Mash with a potato masher when you’ve had enough manual mashing, get a helping hand from a hand blender and blend to form a smooth mash. Add the Dijon mustard, some S/P and mix well. Remove the stems from the mushrooms and place on a tin-foiled baking tray. Spoon the mash on top of the mushrooms and bake for 15-20 minutes in the oven. The mash should be crisp on the outside but super smooth on the inside  cutefacenobackground
