Double mustard whole roasted cauliflower

Delicate mustardy delights

240 kcal  happyfacenobackground  happyfacenobackground  VE

Flavours: 1 large garlic clove, 3 tsp lemon juice, 3 tsp olive oil, 2 tbsp whole grain mustard, 3 tsp Dijon mustard, S/P

Bulk: Medium/large cauliflower head (this one was 1Kg)

Jazzy: add some sliced almonds for the last 5 minutes of the bake to slightly toast

Great with: asparagus

Lets cook: Get the oven heating at 190oC. Cut off the cauliflower’s leaves and the stem. Mix together all the flavours in a cup/small bowl. Coat the cauliflower in the mix (I started by spooning it on but eventually just got right in there with my hands and massaged the mix in). Bake in the oven for 1 ½ hours (a small cauliflower will take around 1 hour and larger up to 2 hours). Make sure the cauliflower is not near the top of the oven to avoid burning. Once done, dig into your big, beautiful vegetable brain and serve with some greens like asparagus  cutefacenobackground
