Feel good ramen

Flavours: 1 tsp Chinese five spice, ½ tsp smoked paprika, ½ tsp soy sauce (preferably light), 1 tbsp miso paste, small garlic clove, ginger, 2 tsp light mayonnaise, fresh red chilli (to preferred spiciness)

Bulk: 100g ramen noodles, 100g firm tofu, 1 egg

Jazzy: spring onions and crispy fried onions to top*

Lets cook: Cook the noodles for 5 minutes (or follow packet instructions), drain and allow to cool. Meanwhile, cut the tofu into flat-fingers and finely chop the red chilli (as much or as little as you like).  Make the Chinese-pork style marinade by mixing the Chinese five-spice, paprika, soy sauce and 1 tbsp water in a bowl. Gently coat the tofu slices with the marinade until evenly coated. In a small container or cup, mix the miso paste, 1 tsp water, grated ginger, crushed garlic, red chilli and 2 tsp light mayonnaise and mix evenly into the noodles (I did this when the tofu was frying). Next, start frying the tofu and boil the egg for 7-8 minutes, turning the tofu over every 2 minutes or so. When the 8 minutes are up, remove the egg from the boiling water and place in cold water to crack open. In a bowl, separate the coated noodles, tofu and halve the egg  cutefacenobackground
