Hot tomato tofu soup

Tofu loves tomato

Flavours: 1 tbsp tomato puree, ½ tsp chilli powder, ½ vegetable stock cube, big garlic clove, pepper

Bulk: 400g tin chopped tomatoes, 150g firm tofu, medium white onion

Jazzy: top with chopped olives and drizzle with a little olive oil

Great with: garlicy ciabatta bread

Lets cook: Place the chopped tomatoes, 1 cup water, puree, crushed garlic, diced onion, stock cube, chilli powder and pepper into a pan and simmer on medium heat for 15 minutes. Meanwhile, chop the tofu into bite-size chunks. Take off the heat and blend with a hand blender until an even consistency. Place back on the heat and add the tofu and cook for a further 8 minutes. Serve however you like and enjoy the rich tomato-tofu goodness cutefacenobackground
