Tofu-beet curry with lime coriander cous cous

Flavours: 3g fresh ginger, 2 tsp mustard seeds, 1 ½ garam masala powder, ½ tsp cumin seeds, ¼ tsp chilli powder, 1 tsp olive oil, ¼ vegetable stock cube, ½ tsp coriander powder, ½ tbsp lime juice, S/P

Bulk: 100g grated carrot, 100g firm tofu, 300g vacuum packed beetroot, 60g dry cous cous

Jazzy: use 1 tsp of both yellow and black mustard seeds

Lets cook: Drain the beetroot, wash under a little running water and blot on some kitchen roll to remove excess water. Chop the beetroot into bite-size chunks and the tofu into small cubes. Add the mustard seeds, garam masala, cumin seeds, chilli powder, olive oil and S/P to a frying pan on medium heat and cook for 6-8 minutes, stirring occasionally to form a paste. Once there’s some great aromas filling the air, add the grated carrot and stir-fry for 3 minutes. Then add the beetroot and stir-fry for another 3 minutes. Meanwhile, mix the veg stock cube coriander powder, some S/P and lime juice in a small bowl with 1/3 cup boiling water. Add this to the cous cous and leave to absorb/cook. Going back to the pan, add the tofu and continue to stir for around 3 minutes until the tofu is hot. Once done, fluff the cous cous with a fork and serve with this delicious chunky curry  cutefacenobackground

  1. This is honestly fantastic! I love beets but I have never tried them out with this combination of ingredients before. Ginger, garam masala, coriander, cumin…this sounds perfect! I’m excited to try this out 🙂

      1. I know what you mean about the dry curry. This reminds me of a kebab dish I ordered one time in India. It was a bunch of roasted and spiced veggies that were removed from the skewer and served on a platter. I wasn’t expecting much, but it was one of the best things I’ve had!
