Flavours (Sweet, Japanese-style mayonnaise): ½ tsp Dijon mustard, 2 tbsp light mayonnaise (can use vegan), 1 tsp rice wine vinegar, 1 tsp honey
Flavours (Okonomiyaki sauce): 1 tsbp tomato puree, 1 tsp vegetarWorcestershire sauce, ½ tsp Dijon mustard, ½ tsp soy sauce, 1 tsp honey
Flavours (pancake): S/P, garlic clove
Bulk (pancake): 120g white cabbage, 1 egg, 20g plain white flour, 2 spring onions
Jazzy: go crazy with the toppings e.g. shredded cheddar cheese, crispy fried onions, shredded carrot, fried mushrooms, fried beansprouts, pickled ginger, sweetcorn, shredded nori, grilled aubergine slices, lots of sliced spring onion, a drizzle of spicy sauce of your choosing, sesame seeds
Lets cook: Start by making the sauces*. For the okonomiyaki sauce, mix all the flavour ingredients together with ½ tbsp water in a small bowl. For the mayonnaise, mix all the flavour ingredients with 2 tsp water. Place in the fridge until later. Next, make the batter by mixing sieved flour with egg, some S/P, crushed garlic and 2 tsp water in a small bowl. Cut the cabbage as thinly as you can and slice the spring onions. Mix these in with the batter in a bigger bowl until evenly coated. Heat a frying pan, with oil of your choosing, (here I used fry light as usual) on medium heat. Once hot, dump the mixture onto the pan and flatten out to form a pancake. Cook on one side for 3 minutes. Place two spatulas under the pancake to turn it over safely and cook for a further 3 minutes. Take off the heat and spoon the okonomiyaki sauce on top. Add any toppings your heart desires and then drizzle the mayonnaise on top of this. Say itadakimasu (いただきます), take a bite and then say oh my okonomiyaki
Here, I used grated carrots, sliced nori sheet and spring onions to top my okonomiyaki, which I highly recommend
* There is well enough of the sauces here for 2 pancakes. I suggest either storing them in the fridge for the next day or so to have again, or double up the pancake ingredients to make one pancake for yourself and another for a very lucky person!
