Eggs ‘n’ veg

Flavours: 1 tsp olive oil, 3 tbsp light mayo, 2 tsp Dijon mustard, S/P

Bulk: 300g broccoli, 350g cauliflower, ½ large bell pepper (or 1 small one), 2 large eggs



Lets cook: Preheat the oven to 220oC. Cut the cauliflower into bite-size pieces and microwave for 3 minutes. Cut the broccoli and pepper and mix the olive oil, mayo, mustard and S/P into a small cup. Add the broccoli, cauliflower and pepper into a large bowl and stir in the mayo-mustard mix until everything’s coated. Transfer into oven dishes and bake for 8 minutes. Then take out the oven and make a hole in the middle of the dish by pushing aside the veg. Crack the egg into the middle and place back into the oven. Bake for a further 8-10 minutes making sure the egg is cooked but the yolk is still a little runny. You can cook it for longer to make a hard yolk if you like.
