Mapo Leek Tofu

Hot chunky tofu

250 kcal  happyfacenobackground happyfacenobackground  VE

Flavours: ½ red chilli, 2 tbsp cornflour in 100ml water, 2 tsp soy sauce, small garlic clove, ginger, S/P

Bulk: 300g firm tofu, 1 large leek (or 2 small/thin leeks)

Jazzy: top with sliced spring onions and/or sesame seeds

Great with: a side of fresh cauliflower florets

Lets cook: Slice the leek, crush the garlic clove and grate the ginger into a frying pan. Start frying over a medium heat and cut the tofu into chunky cubes. Add them to the pan with 1 cup boiling water. Simmer for 7 minutes, stirring every minute or so. Be careful not to smush the tofu. Mix the corn starch with water in a separate cup and add to the pan and stir around evenly. Cook for a further 5 minutes and it’s done  cutefacenobackground
