Effortless feta goodness
Flavours: ½ tsp oregano, 2 tsp olive oil, S/P
Bulk: 3 large salad tomatoes, 1 ½ courgettes, ½ green bell pepper, handful of olives, 100g feta*
Jazzy: more feta, Greek wine to drink
Great with: a selection of small hot and cold dishes to create a beautiful meze
Lets cook: Preheat the oven to 220oC. Cut all the ingredients into rough sized pieces. Place into a big bowl and mix around the olive oil, oregano and S/P. Place into oven dish/es and cook for 10 minutes. Remove from the oven, top with the feta and bake for another 10 minutes. So feta
* Here I used Apetina 10% fat cheese. It’s quite a mild flavour and not as strong as feta.
